Over the next few weekends in February, students from Warmian-Masurian schools will test the truths and myths about dietary supplements, create intelligent food packaging, and learn about food allergens. They will also learn how to correctly interpret food labels and information provided at food service outlets. Under the supervision of scientists and using modern research equipment, they will conduct experiments in the food function, microbiology, biosensor, metabolomics, and other laboratories located at the Food Science Division of the Polish Academy of Sciences Institute in Olsztyn. Students will conduct their own milk quality assessment tests, examine the antioxidant properties of natural preservatives, and identify fatty acids found in commonly available edible oils. The workshop program will also include lessons on microorganisms used in food production and the effects of the Maillard reaction, which occurs during food processing. Furthermore, students will have the opportunity to test their sense of smell in a computerized sensory evaluation lab.

During the workshops, students and teachers will learn the latest information regarding nutritional recommendations. Participants will discuss the "Healthy Eating and Lifestyle Pyramid for Children and Youth" with experts, designed to facilitate healthy eating for children, adolescents, and parents. One of the workshop goals is to explain to participants that healthy eating involves consuming adequate amounts of nutrients such as proteins, fats, carbohydrates (including fiber), vitamins, and minerals. Furthermore, the workshops will provide students with knowledge of commonly used food research. The workshops also include time for unconventional exploration of facts related to food and healthy eating while solving puzzles in an escape room game.

At the end of the workshop, participants will take a quiz to assess their understanding of the information presented earlier.

Educational materials developed for primary school students

Scientists from the Institute of Animal Reproduction and Food Research of the Polish Academy of Sciences and experts from Maspex were involved in creating the educational materials.

The aim of the materials prepared for students was to present simple principles of healthy eating, as well as ways to maintain a healthy lifestyle from an early age. Knowledge of selecting age-appropriate foods and the basic principles of a balanced diet are crucial in building children's confidence in food. Often, omitting certain food groups results from the erroneous perception that they are untrustworthy or cause weight gain, while the key to proper nutrition lies precisely in the ability to create a balanced diet containing a variety of foods. Learning the role of individual food components and the principles of healthy eating will contribute to children's better understanding of the impact of nutrition on their health.

Thanks to cooperation with the principals and teachers of selected schools, the materials will be delivered to students, and thanks to the attached survey, we will learn the children's opinions, which will help us develop further doses of knowledge for them.

The events and educational materials developed are part of the #AnnualFoodAgenda project (www.annualfoodagenda.com) financed by the EITFood Community ( https://www.eitfood.eu/ ).
