The aim of the project, carried out in consortium with the Jan Długosz University in Częstochowa, is to develop a product innovation in the form of a powdered whitener intended mainly for coffee and soups, using alternative plant-based emulsifiers, including plant proteins derived from food industry waste, which will be additionally enriched with a fibre preparation from potato starch, with documented patent reservations and prebiotic properties. The product is intended for people who are intolerant to animal (milk) proteins commonly used in commercially available whiteners.
The project is co-financed by the National Centre for Research and Development as part of the NUTRITECH programme – nutrition in the light of the challenges of improving the well-being of society and climate change.
