The aim of the project The project aims to conduct development work that will result in the development and implementation of a technology for the production of unsweetened fruit and vegetable preserves enriched with a prebiotic fiber preparation from potato starch, with organoleptic properties acceptable to children and adolescents, and with adequate storage stability. Furthermore, a pilot study is planned to assess the impact of enriching fruit and vegetable preserves with a starchy fiber preparation with prebiotic properties on overweight and obese children and their metabolic complications.
