The project is implemented under the Smart Growth Operational Programme 2014-2020, Measure: 1.1. R&D projects of enterprises, Sub-Measure 1.1.1. Industrial research and development work carried out by enterprises.

The aim of the project is to develop a technology for producing apple-based products, such as purees and/or smoothies, with increased levels of bioactive compounds (polyphenolic compounds) beneficial to human health. Higher levels of active ingredients in apple-based products will be achieved by using apple varieties particularly rich in these active ingredients, combining apples with other fruits containing these active ingredients, adding pectinolytic enzymes to produce purees, and homogenizing the finished product.

The enzymes used will increase the level of active ingredients in apple-based products. The enzymation and homogenization processes will improve the bioavailability of compounds contained in the purees and will also improve the consistency of the products. The effects of the developed new technological processes (puree enzyme and puree homogenization) will be compared to the Applicant's current portfolio, which does not incorporate process innovations, through analysis of the active ingredient content and their bioavailability.
