The project is implemented under the Smart Growth Operational Programme 2014-2020, Measure: 1.1. R&D projects of enterprises, Sub-Measure 1.1.1. Industrial research and development work carried out by enterprises.

The aim of the project The project aims to conduct comprehensive industrial research and development work aimed at implementing new technological solutions in the production of juices and beverages, which will increase the attractiveness of these products. Increasing vitamin levels, improving sensory performance, and extending the shelf life of fruit and fruit-vegetable juices and beverages will be achieved through the development of innovative process solutions for degassing water used in production and optimizing the degassing process of the finished product. These significant technological improvements will reduce the amount of oxygen in the finished product, which negatively impacts sensory characteristics and vitamin content. The project will also include work on optimizing the cooling system and reducing foam generated during production. Process solutions will also be digitized: an expert system utilizing a machine learning algorithm will be developed to optimize the production process, with particular emphasis on the degassing process. For a given type of product being bottled, the algorithm will enable direct interpretation of the results of the obtained process parameters, identify relationships between the entered data, and propose parameters for the degassing process through automatic parameter adjustments.
