Development of an innovative method for producing tomato products based on natural ingredients

The aim of the project was to develop a new method for producing ketchups, which would be a healthy alternative to products available on the market.
The main objective of the project was achieved through:
- selection of appropriate raw materials and ketchup ingredients (including the appropriate tomato variety and composition of vegetable purees) giving the products an appropriate organoleptic profile and significantly increased nutritional value
- development of technology enabling the elimination of thickening substances
The project allowed for the development of new solutions in the technology of production of fruit and vegetable preserves and development product innovation.
The direct result was ketchup. with a high tomato content, composed of carefully selected raw materials based on tomatoes, which do not lose their valuable properties after heat treatment - they contain vitamins A, C and retain their most valuable ingredient - lycopene.
The project was implemented under the Regional Operational Programme of the Lodz Voivodeship for 2014-2020, Axis 1. Research, Development and Commercialisation of Knowledge; Measure 2.1. Enterprise Investments in Research and Innovation
