New solutions in the production process of concentrated fruit juices with increased health properties

The project is implemented under the Smart Growth Operational Programme 2014-2020, Measure: 1.1. R&D projects of enterprises, Sub-Measure 1.1.1. Industrial research and development work carried out by enterprises.

The aim of the project The project aims to develop a technological process for obtaining concentrated fruit juices, both cloudy and clear, utilizing new solutions previously unavailable in Poland. Switching from hydro-unloading the raw material to dry unloading and transport will improve its physicochemical parameters in subsequent stages of the process. Batching the fruit will enable full traceability of the raw material from unloading to the finished product. Automation of enzymatic and clarification processes will be introduced into the process. The extraction stage will be automated, and an algorithm will be developed to determine the best parameters for this process. An algorithm will be developed to process input data and propose the best extraction conditions. The developed technology for concentrated fruit juices, both cloudy and clear, will maximize raw material utilization and minimize losses. The implemented solutions will reduce the oxidation of the concentrate, which will directly translate into improved physicochemical and sensory parameters. The project involves the development and construction of a prototype device that will meet the requirements of the newly developed technological process for obtaining concentrated fruit juices (concentrates).
