The aim of the project, carried out in consortium with the Wrocław University of Environmental and Life Sciences, is to develop a product innovation in the form of functional, high-protein vegetable spreads.
The results of the project will be achieved through R&D work aimed at developing new recipes and methods for producing vegetable products such as high-protein vegetable spreads based on chickpeas, lentils and beans, with particular emphasis on modulating the digestibility of plant-based protein and/or high dietary fibre content as key aspects of the functionality of the formulations obtained.
The project responds to the identified needs of consumers, in particular the needs of people undergoing regeneration, reconstruction and convalescence, as well as those at risk of inflammation and/or diet-related diseases, for a natural source of plant-based protein.
The project is co-financed by the National Centre for Research and Development as part of the NUTRITECH programme – nutrition in the light of the challenges of improving the well-being of society and climate change.
