The project is carried out within the framework of Regional Operational Program of the Silesian Voivodeship for years 2014-2020, Priority Axis I. Modern economy for Measure: 1.2. Research, development and innovation in enterprises.

The aim of the project is development of a technology and starter culture with breakthrough innovation features for controlled, industrial fermentation of vegetables.

The economic goal of the project is The introduction of vegetable preserves not currently available on the market will be made possible by the development of technology enabling the controlled, repeatable industrial production of pickled vegetables with unique health-promoting properties.

The result of the project implementation will be The use of original biotechnology will create repeatable products, produced on an industrial scale, such as pickled vegetables with a long shelf life, stable and exceptional flavor, and health-promoting (probiotic) properties. By leveraging the currently available scientific knowledge and skills developed as part of the new industrial fermentation project, completely innovative products will be prepared for implementation compared to those currently available on the market.
