Influence of starter strains of lactic acid bacteria on the quality and health-promoting properties of fruit and vegetable products

Traugutta 130, 42-110 Popów The project is implemented within the framework of the Regional Operational Programme of the Silesian Voivodeship for the years 2014-2020, Priority Axis I. Modern economy for measure: 1.2. Research, development and innovation in enterprises. The goal of the project is to develop a technology and starter culture with groundbreaking innovative features for the controlled, industrial fermentation of vegetables. The economic objective of the project is to market the currently not offered vegetable products. This will be possible thanks to the development of technology allowing for controlled, repeatable industrial production of pickled vegetables with unique health-promoting properties. The result of the project will be the application of original biotechnology, thanks to which repeatable products will be created, produced on an industrial scale, i.e. pickled vegetables with high durability, stable and exceptional taste and pro-health (probiotic) properties. By using the currently available knowledge and skills in the field of science, created within the framework of the new industrial fermentation project, they will be prepared to implement completely innovative products in relation to those currently on the market.
